A refreshing energy boosting take on tortillas. Full to the brim of nourishing vegetables which are rich in vitamin C, fibre and antioxidants. Pork is such a nutrient dense meat, full of b-vitamins which are essential for energy production. Perfect mexican fiesta for all the family to enjoy.

Ingredients:
1 Lebanese cucumber, finely sliced
¼ cup apple cider vinegar
water
1 tsp salt
1 tsp sugar
300g pork mince
1 yellow capsicum, deseeded and sliced
1 onion, sliced
1 celery stick, finely sliced
1/8 red cabbage, finely sliced
1 carrot grated
2tbsp mayonnaise
1 tsp tamari or soy sauce
1 lime, zested and quartered
handful of fresh coriander, finely chopped
6 corn tortillas
Sweet & Sour sauce:
1 tbsp apple cider vinegar
1 tbsp honey
1 tsp tamari or soy sauce
2 garlic cloves, minced
½ tsp chilli flakes (optional)
Method:
- Prep all ingredients before you start cooking.
- Make the cucumber pickle; In a medium bowl add sliced cucumber, ¼ cup apple cider vinegar, top up with water to cover cucumber, add in 1 tsp sugar and 1tsp salt and mix well, set aside.
- Make the sweet and sour sauce; in a small bowl add apple cider vinegar, honey, tamari, minced garlic and chilli, stir well, set aside.
- Make the Asian mayo; in a small bowl add mayonnaise, 1 tsp tamari, pink of lime zest and squeeze of lime juice and stir well, set aside.
- Make the slaw; in a large bowl add shredded cabbage, celery and carrot add juice of a half a lime, pinch of salt and toss to coat, set aside.
- Heat a large frying pan, medium high heat, large splash of olive oil, once hot add onion and fry for 2-3 minutes until soft and fragrant. Add capsicum and fry for 2 minutes, add pork, keep stirring to break up and cook through until browned for 5 minutes. Once pork is cooked, turn heat to high and add in sweet and sour sauce, stir well for 2-3 minutes. Take off heat and set aside.
- Heat up tortillas, as per instructions.
- Load up tortillas with slaw, sweet and sour pork, drained cucumber, top with a drizzle of Asian mayo, sprinkle with fresh coriander and squeeze of lime. Enjoy!
